I preach this all the time — add more fats and protein to your breakfasts, while lowering the carbs. Most of the time when clients come to me needing help I cringe when they tell me what they’re eating for breakfast. Bless their hearts they think their yogurt with granola, or cereal, berries & vanilla almond milk or their giant fruit smoothie, is healthy.
While yes all of those options are healthier options they are not ideal since they are all very high in carbohydrates & sugars yet are relatively low in fats and proteins.
Here’s the thing, when you blast your bloodstream with sugars first thing in the morning you’ll inevitably suffer from a sugar crash a few hours later, leaving you ravenously hungry for guess what, more carbs & sugars. This vicious cycle lasts for the rest of the day wondering what the heck is going on that you are SO damn hungry all day long!
I’ve been there! I totally understand! When I started incorporating more fats and protein to my diet my appetite changed. I was no longer ravenously starving every hour on the hour. In fact I could enjoy a large, hearty breakfast without getting hungry again until late in the afternoon. My blood sugars stayed more stabilized and my appetite was satiated longer.
Eggs are a staple breakfast food in my house. We literally go through about 4 dozen eggs a week! A typical morning for both my boyfriend and I is 3-4 eggs a piece along with all kinds of delicious veggies and of course, Cholula hot sauce.
Here is one of my favorite healthy breakfast recipes that is jam packed with fats, proteins & nutrients and tastes seriously amazing! Healthy breakfast tacos make me happy!
Ingredients
2-3 Corn Tortillas (Non GMO whenever possible)
Grassfed Beef Taco Meat (Already prepared)
2-3 Organic Cage Free Eggs
Non-Stick Cooking Spray or Coconut Oil
Tomato
Avocado
Cilantro
Cucumber
Hot Sauce
Directions
You’ll most likely need two non stick pans for this–one for cooking eggs, the other for heating tortillas. While your pans are warming up (Medium heat) oil both of them with your favorite cooking oil. We typically use coconut but really anything works. Crack your eggs into one pan and your tortillas in the other. You’ll also want to heat up your pre-made taco meat at this time which you can do either in the microwave or simply add it into your eggs.
While everything is cooking you’ll want to chop and dice all of your veggies. Once your eggs are cooked to your liking (I love over medium eggs) and your tortillas are slightly toasted, you’ll just need to put your tacos together. Garnish with cilantro & your favorite hot sauce and enjoy your breakfast tacos!
I hope you love this recipe as much as I do! You can truly add any veggies that you like to it. You can have it without the taco meat as well and it will still be delicious!
